Meal Plan Monday and a Bonus Cabbage Roll Skillet Recipe!

These past few weeks I feel like I have gotten soooo lazy in the cooking department! Our meals have gotten seriously simple over here! Between running kiddos to all of their activities and all the chores that need to get done around here I just don’t have time! Now that the weather is nice, cooking has moved down on my priority list! I think most moms can relate, right?!? So I am all about quick, easy and healthy meals I can throw together in a matter of minutes! I think that has been the theme of most of my Meal Plan Monday’s lately! Ahhh lazy mom’s unite!

Also hello warm weather! That makes me want to cook even less! Soooo break out the grill people! That will make your lives soooo much easier this time of year! We have been serving some type of grilled meat, potatoes, veggies and salad on repeat around here… and no one is complaining! When time is really tight and grilling is not a option I have been breaking out the crock pot. And no the crock pot is not only for the fall and winter! Crock pot carnitas has become a weekly staple in our house. And the leftovers have unlimited possibilities… double win!

  1. One pot meals are a huge time saver in both the cooking and cleaning process! I make a mean cabbage roll skillet with just four ingredients that my family loves! Check out the recipe at the end of this post!
  2. Like I mentioned before Crock Pot Carnitas have been my go to lately! Pile that delicious pork over rice if that’s your thing, or over a huge salad if you are like us! Top with salsa, guac and fresh cilantro to make the perfect meal!! Check out MariaMakes for an amazing recipe that makes tooonns of leftovers!
  3. Ok now this recipe took a little prep but was delicious none the less! I have been meaning to try Sarah’s recipe for Thai Meatball and Egg Drop Soup from her blog A Saucy Kitchen for a long time now. I finally made it last week and I’m in love!   4. Another easy and satisfying one pot family favorite in our house is steak fajitas! Jessica from Easy Living Today has a great recipe! Find it here!
  5. We are using up the last of my freezer stash of home grown chickens and this Beer Can Chicken recipe from Jo Cooks is AMAZING! So juicy! I did mine in the oven like her recipe and eliminated the brown sugar. But you can also make a mean chicken on the grill as well!
  6. Last recipe for this week is this tasty and family friendly recipe for Sausage Pizza Twice Baked Sweet Potatoes from The Paleo Running Momma! Ahhh all adults and kids in our house devoured them all!

Paleo Cabbage Roll Skillet
Remember those homey cabbage rolls Grandma spent hours making?! Well here is my lazy mom interpretation! It only takes four ingredients to make this one pot, satisfying, comfort food!

  1. Brown ground beef in your skillet
  2. Once beef is browned add sliced cabbage, tomato juice, and salt to skillet
  3. Cover and cook on medium heat until cabbage is tender. About 20 minutes.

Taco Beef and Veggie Stuffed Sweet Potatoes

I am always on the hunt for new family friendly recipes. And with us now on our fourth round of the Whole 30 adding variety to our meals is key. What is the phrase? Variety is the spice of life?! So true right? So this time I am doing my best to mix up our meals and try lots of new things!

Now for me, I tend to find something I like will stick with it. I will eat it day in and day out. Have you been following my salad obsession on Instagram??? Now this is totally cool if I do this for my lunches, but not so cool for family dinner. I need to mix things up or no one will eat, well besides me!  My husband totally needs variety keep him entertained, and if I am going to keep him excited about this Whole 30 craziness I need to serve him food he will want to eat! This time the tons of new recipes I have been trying are really making this round easy! My husband even mentioned that this has been the easiest round yet!

So easy and enjoyable that we decided to extend it out an extra 30 days to see if we can get some pesky skin and GI issues to totally clear up. Day 39 today and we are both feeling pretty great. And I am totally seeing some improvement in my skin just in the last week. Win, Win! But this is a whole different topic for another time…

Back to the real point here! Variety, Healthy Dinners, Family Friendly Recipes! That was what I was really taking about, right?! Every Whole 30’er with little kids needs some go to recipes that please the whole family. And I am always on the hunt for such recipes! I refuse to make two dinners and my kiddos start to get bored with meat, potatoes and veggies after awhile. So I started throwing things together and came up with this awesome Taco Beef and Veggie mix that can be stuffed into Sweet Potatoes for a healthy, filling and well rounded meal everyone will love. It can also eaten alone, or over a salad. Whatever works for you!

Taco Beef and Veggie Stuffed Sweet Potatoes

Instructions
  1. Brown Ground Beef (I used lean grass fed ground beef so there was very little grease to drain off, depending on the type of beef you use you may need to drain off the grease after browning your meat)
  2. While beef is browning dice and shred your veggies
  3. After beef is browned add in diced onions, bell peppers, and jalapeño. Saute over medium heat for about 3 minutes or until veggies begin to soften
  4. Add in garlic and cook for another minute
  5. Add shredded carrots, zucchini, diced tomatoes, salsa and spices to your meat mix. Add salt to taste. Stir and simmer for about 10 more minutes.
  6. While Taco mix is simmering, cook your potatoes. I am always in a rush with dinner so I just wash them, poke a few holes in each and microwave them for about 10 minutes or until they are soft. If you have tons of time you can always cook them in the oven for about an hour at 400 degrees.
  7. Once your Taco Mix and Sweet Potatoes are cooked, slice and stuff your potatoes with your mix, top with some Guacamole and Cilantro and Enjoy!!!

Meal Plan Monday 4

Happy Monday Friends! It’s that time again… time for me to fill you in on all my favorite recipes from last week! As I mentioned in my post last week we are doing another Whole 30. After our Disney Trip and a few crazy busy weeks around here we are in need of a little reset. And the Whole 30 Program is our go to when we need to get back on track!

We have a few Whole 30’s under our belt now so getting ready and adjusted to being on the program isn’t too hard for us anymore. Check out my post on our last round here! So in the spirit of the Whole 30 all of the recipes I have to share this week are Whole 30 approved. Now we are a family of five, two adults and three kiddos. And when we do the Whole 30 all of the dinners I make for the family are Whole 30 approved and everyone eats the same thing. I refuse to make separate dinners for the kids, and thankfully our kiddos are great eaters! Now breakfast and lunches for them may look a little different that what my husband and I are eating, and will include some non approved foods.

  1. Whole 30 Sloppy Joe Bowls– Even though we are doing a Whole 30 I still try to find recipes that the kids will enjoy as well. This is a family favorite in our house and a bit of a comfort food! We topped baked sweet potatoes with this awesomeness! Thank you Chrissa from Physical Kitchness for this crowd pleaser! 
  2. The Best Pork Chop Ever– Katie from I am Katie definitely hit the nail on the head with the name of this recipe! Crispy and perfectly seasoned! Even my one year old gobbled hers up! Wonderful for lunch the next day as well.
  3. Hearty Chicken and Vegetable Soup– I made this recipe minus the chicken this week and it lasted us days! Filling and delicious. I love me a big bowl of soup!
  4. Paleo Meatloaf– Shanti from Life Made Full has this amazing meatloaf recipe on her blog! I did not have three pounds of ground beef like the recipe called for so I subbed in one pound of Whole 30 compliant Italian sausage and it turned out amazing! Great for breakfast and lunch as well!

 

So those are our favorite recipes from last week! These recipes made a ton of leftovers too, which was perfect for lunches the next day! That helps cut down on some of the food prep during a Whole 30! Homemade Stock from Your Kitchen Scraps

Happy Thursday Friends! Right now I am sitting here planning my meals and getting my grocery list ready for next week! We seriously have nothing to eat over here! I still haven’t really restocked after our trip and we have been basically living out of the freezer for the past few days. If you read my last post you know I am all about making huge lifestyle changes for the New Year. On the top of that list is tackling our debt! The hubby and I sat down last night and wrote all of our debt down and it is a little daunting seeing it all laid out like that. Then again it gives me way more motivation to make the lifestyle changes needed to become debt free.

On that note I have been looking into ways to decrease our bills and monthly spending. Once I wrote down all that we spend in a month I realized we are spending a tooooonnn of money on food. Like it is our second largest bill next to our mortgage. If you have been following me for a little while you know health and clean eating is very important to me. So I have always justified the large amount of money we spend on food. But, since we are looking to save money I have been searching for ways to bring this expense down.

One thing I have been trying to do is not waste money on things I can make myself for next to nothing. I am constantly cooking and have large amounts of veggie and fruit scraps that accumulate over the week. Usually I toss most of them to the chickens or goats for treats. But recently I have been saving them in a gallon sized ziplock bag in the freezer to use when I make stock.  Soooooo easy! And why spend money on something you can make for free! I use stock for everything… making rice, soups, roasts, or even to just sip on! Check out my recipes for Hearty Chicken and Vegetable SoupSausage and Kale Soup, or Hearty Sausage, Pepper and Onion Skillet, which are all awesome ways to use your homemade stock!!

As you prepare your meals during the week toss all of your vegetable scraps into a gallon sized ziplock bag.  Store it in the freezer until it’s full. Carrots, onions, celery, herbs, garlic, zucchini, leeks, squash, parsnips, and potatoes all make amazing stock! Stay away from cauliflower, cabbage, brussels sprouts and broccoli as they can make your stock taste bitter.

The basic stock starts with onions, carrots and celery. But you can go in any direction you like with your flavorings, get creative people!! For stock that works well in Asian recipes try adding ginger and lemongrass. I just toss in whatever veggie scraps I have for the week into that ziplock bag, I don’t get too fancy!  The stock will last in the freezer for up to 6 months.  If you are like me you will accumulate lots of scraps and will be making stock weekly.

I do the same with my chicken bones that I do with my veggie scraps. Toss them all in a baggie in the freezer and then when the bag is full I load up my stock pot! Add chicken bones and a bag of veggies scraps, a pinch of salt, bay leaves, a splash of cider vinegar and some seasonings and let it simmer away. I usually let it simmer for at least 6 hours to get the most amount of minerals and collagen from the bones! Then I store the same as with the vegetable stock, see recipe below!

  1. When your freezer bag of scraps is full empty into a stockpot, cover with water, add bay leaves, salt and seasonings of your choice and simmer for about an hour.
  2. Strain through a mesh strainer or with cheesecloth if you prefer, and store however you like. I like to fill a few mason jars, let cool then freeze them. Or you could freeze in an ice cube tray and transfer the cubes to a baggie for easy access. Whatever you like!

Hearty Chicken and Vegetable Soup

Does anyone else feel like life is moving in Fast Forward lately? These last few weeks before Christmas are always stressful! Sooo much to do and not enough hours in the day to get everything done. I actually just started my Christmas shopping TODAY, better late than never right?! Last year I was already done. I was due with Little Miss early December last year, and was determined to not have to worry about anything once she was born. This year with a now toddler running around and a 4 and 5 year old, I am not so organized! Thank you Amazon!

This year I am also trying to not go crazy with the gifts. Santa is on a budget and the kids do not have a whole lot of needs. They also don’t have a whole lot of wants on their lists this year, which makes things easier. I’m trying to be practical with the gift giving for everyone this year. I’m spending the time trying to find gifts everyone will actually use. Not just things to open and toss to the side. It’s hard! It is also so hard trying to raise appreciative kids in todays society, but we are trying over here!

Annnyyyways onto to real reason of this post! One thing we all don’t have time for this time of year is spending hours in the kitchen slaving over the stove. Meals need to be quick, satisfying, and healthy. I am also on a soup kick lately, so bear with me. I don’t know if its the colder weather or the lack of time, but there is just something so comforting about a big bowl of soup. And for me it’s easy to just throw a bunch of things in a big old pot and let them simmer away into something delicious. This recipe is super easy and soooo good!

After numerous Whole 30’s I know that when I am eating a Paleo diet I feel my best. So I am always looking for delicious, clean recipes that I will enjoy. But as a busy mom it is not always about me. I refuse to make separate meals for the kids, so dinner has to be something everyone will enjoy. This recipe is a crowd pleaser in our house and is a great way for me to get the kids to eat a whole bowl of veggies!

  1. Wash, Peel and Dice all your Veggies
  2. Add olive oil to your stock and heat for a minute. Then add diced vegetables and garlic and sautee for about three minutes
  3. Add stock, chicken, diced tomatoes, bay leaves and salt and pepper
  4. Bring to a boil then turn to low and simmer for about 20 minutes or until vegetables are tender
  5. Add Spinach and Simmer for an additional minute or two
  6. Remove Bay leaves and Serve!

If you aren't gluten free or on a Whole 30 add some cooked Gnocchi to your bowl before serving or serve this with a nice big salad and some crusty butter bread for dipping!

Sausage and Kale Soup

I am not going to lie I have NOT been looking forward to the coming of the cold weather. I was definitely enjoying the Indian Summer and the warm Fall days we have been having.  But here in Eastern Pennsylvania winter is starting to make her appearance! We woke up to temperatures in the 20’s this morning and everything covered in a beautiful, shimmering blanket of frost.

That makes things a little more difficult around the homestead. Getting up and out to feed and water the animals is always a little more painstaking in the cold. But it has to get done and everyone was happy to get their breakfast this morning!

Now I love me a good bowl of soup. I love soup in any kind of weather. In the dead of summer I can still enjoy a huge bowl of hearty soup! But I especially love curling up on the couch with a steaming mug of soup when it is freezing cold outside. It is such a comfort food for me and really feeds my soul. My husband on the other hand is not a huge fan of soup. There are really very few soups that I make that he really likes, but this awesome recipe is an exception. He will eat this for dinner and actually take leftovers for lunch the next day…. which says A LOT!

This recipe is perfect for a cold day! It reheats well, can easily be make Whole 30 compliant and is a family favorite in our house! This is a great way for me to get the kids to eat their leafy green veggies as well! So it really is a huge winner all around. Hopefully this will make it into your meal rotation and will warm you up on those cold winter days to come! Enjoy!

  • 1 can Coconut Milk Refrigerate the can and just use the cream from the top of the can and save the milk for another recipe
  • Sriracha To Taste Or Franks Red Hot if Whole 30
  • Salt To Taste

  3. After sausage is browned add potatoes and chicken broth to dutch oven. Simmer for about 20 minutes or until potatoes are tender
  4. Add Kale and simmer for 5 more minutes
  5. Add the cream from the top of your can of coconut milk. Stir and add in Sriracha or Hot sauce to taste. Serve and Enjoy!
Recipe Notes

This is such an easy and delicious recipe! And you can really use what you have on hand. Sweet or white potatoes are both delicious, but if you aren't a fan of sweet and savory opt for the white potatoes! Kale or Spinach both work in this recipe as well. Very versatile!

So many apples!

Ohh Sunday’s are my favorite! I worked last night, boo but I prepped some crockpot snacks before I took a nap this morning!  Score for delicious food ready for when I woke up… And since I woke up I have been hanging with the family and watching Netflix on the couch! Freaking amazing, because I never get to do this! In other exciting news the hubby has been busy prepping our little farm for a new addition arriving today… More details to come, stay tuned!halloween

On another unrelated note… how is it November already? Seriously.  This year has completely flown by! I hope you all had an awesome Halloween, a little late I know, but we have been busy! These past two weeks have really been packed full of activities for us. And yesterday I was just updating our November family calendar and realized this month is going to be just as busy! We have managed to cram in apple picking, Halloween parades, Trick or Treating and more before Halloween.

Last Sunday we went to Boo at the Zoo at the Philadelphia Zoo for the first time. We had a blast, and the kids had a pretty good time as well! We had a beautiful Ariel, red hair and all, Batman and Tinkerbell in our entourage! The weather was just beautiful in the morning, but later in the day the rain came and we only got about an hour into Trick or Treat. Which isn’t necessarily a bad thing, the extra candy laying around isn’t good for figure!apples3

I may be a little late hopping on the apple bandwagon, since apple season is pretty much over.  But I wanted to share my recipe for Crock Pot Apple Butter anyway because it is soooo easy! Apple picking is one of our favorite fall activities! We picked about 50 lbs this year and I used a good amount of them for this recipe.  I actually made two batches because we love it so much! We planted two apple trees on our property when we first moved here and cannot wait till they start bearing fruit! There are so many things to make with apples! This recipe is probably the tastiest thing you can make with the least amount of work! The hardest thing is peeling the apples, and if you have one of those fancy apple peeling contraptions then these recipes are REALLY easy!!

Easy, tasty and all natural!

Instructions
  1. Prepare your apples. Peel, core and dice. I do not have one of those fancy apple peeler but this worked just fine!
  2. Pile all your apples and all other ingredients into your slow cooker
  3. Cover and cook on low for 10 hours. I usually throw everything in before bed and let it cook over night
  4. Aftern ten hours transfer everything to your blender or food processor and blend until smooth
  5. Transfer back to the slow cooker and cook on low uncovered for about another hour. Stirring every 15 minutes or so. This helps it to thicken up
  6. Transfer to containers for storage. I use mason jars and keep them in the fridge for about a week or in the freezer for several months

Fall Favorites and a Healthy Weeknight Dinner Recipe!

Hi All!! Hope everyone is having an amazing week and you are getting to enjoy all of the awesome things Fall has to offer! I finally got some of my fall decorations up in the house, and we got our pumpkins and mums for outside last weekend. This is my absolute favorite time of the year. I love that timg_5023he mornings are cool and crisp, but the afternoons warm up to glorious temperatures. Perfect for all those awesome fall outdoor activities! And of course I love EVERYTHING pumpkin… and apple for that matter! Fall candles, apple cider, tall boots, and jeans and hoodies… seriously does it get any better?!?

I took a day off last weekend so we could get in all sorts of fall family activities! And we have more things lined up for the next two weekends leading into Halloween! We are planning our annual apple picking trip for Sunday, which always leads to a restocked freezer full of homemade applesauce and apple butter. We also already got in our hayrides, corn maze and pumpkin patch trip. So many fun things to do before the weather gets too cold! The beginning of this week has been unseasonable warm, so I keep kicking the kids outside as soon as they get home from school to soak up this awesome weather! We all know the cold and snow is coming here in Eastern Pennsylvania!

Things have been so busy around here and sometimes it is so hard to balance everything. So I took a few days off from the blog to concentrate on things that needed to get done around the house. With jobs and three kids I feel like there is never a free second in the day, something or someone always needs my attention. We have some big things coming up that I am starting to plan for, which I am really excited about! Our littlest love is turning one at the beginning of December and birthdays, especially first ones, are a huge deal around here. So the planning has started for her party!
Also, we are planning a Walt Disney World trip for the end of January, which takes tons of preparation! We will be there for my oldest and my birthdays so it will be an extra magical trip! With all the holidays and celebrations coming up money and time always become a factor. So our meals have to be quick and cheap lately. Now those two things don’t always go hand in hand with healthy, right? So I am always on the hunt for recipes that are hearty, healthy, can be thrown together in a snap and are easy on the wallet… whew! That’s a lot to ask for in a dinner!

This recipes is soooo easy and soooo delicious! And it only has a handful of ingredients! Our CSA share finished up last week, which I am super sad about, but we got an awesome cabbage in one of our last baskets. Perfect for this recipe! Combine that with some potatoes and kielbasa and you have the perfect weeknight fall meal! Now my 4 and 5 year old are pretty good eaters, so I have no trouble getting them to gobble up this meal, but the cabbage in this dish has an awesome sweetness that little bellies will love!   1. Melt butter in skillet
  2. Add chopped cabbage, diced potatoes and diced kielbasa
  3. Cover and cook on medium heat until potatoes are tender and cabbage is soft. Stirring occasionally.
  4. Salt to taste and enjoy!!

Easy Weeknight Whole 30 Dinner

Ever have those days where you are running around like a chicken with your head cut off all day… then comes the evening when you finally get to slow down and you realize you haven’t even thought about dinner? And you have two children and a baby screaming that they are hungry? And you are doing a Whole 30 and are freaking starving as well? Ahh seems like this is a daily struggle here in our house. No matter how hard I try to plan ahead I always get caught up in all of the tasks the need to be accomplished…. and Poof all my planning goes out the window!

 

Thankfully I do meal plan, so there are always the components of a healthy meal on hand.  Just putting them all together is sometimes the problem! I usually do a big grocery order every two weeks, with maybe a stop or two in between to restock on whatever we ran out of too quickly.  I swear these kids are starting to eat me out of house and home! I usually plan for about 12 dinners in that two week period, and hopefully each dinner will make enough for dinner and lunch the next day.  The other two dinners  will be either be eaten out or leftovers.

 

Yesterday was one of those especially busy days.  It was my son’s 4th Birthday! Yay! So we are planning for a party, one of the dogs had a vet appointment, I am in the middle of getting ready for a huge consignment sale, and tons of other little things had to be taken care of. Meaning the day literally got away from me! We spent the better part of the morning and early afternoon running around. Came home for naps then had to get big sister at school, do homework, you know the drill. Dinner time was creeping up and I had nothing planned. I took a quick look at my meal plan, four the three easiest things and went to work.

 

I decided on bacon wrapped smoky chicken tenders, butternut squash puree and ghee and garlic green beans. All quick, easy, healthy and family favorites. I mean who doesn’t love bacon?! Bacon makes everything taste good!

 

Bacon Wrapped Smoky Chicken Tenders

Serves 6

Ingredients:

2 packages Chicken Tenders

1 lb uncured, sugar free bacon

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon onion powder

1/2 teaspoon sea salt

1/2 teaspoon black pepper

 

  1. Preheat oven to 375 degrees F
  2. Covered a rimmed baking sheet with tin foil and place a baking rack on top
  3. Rinse and pat chicken dry
  4. Mix spices in a small bowl
  5. Coat chicken tenders in spice blend
  6. Slice bacon slices in half and wrap bacon around chicken tenders, place on rack with “seams” of the bacon on the bottom. use extra bacon slices for bigger tenders that need more bacon!
  7. Bake for 30 min

 

Butternut Squash Puree

Serves 4

 

Ingredients:

1 large butternut squash

2 tbsp. ghee

Salt to taste

 

  1. Peel, seed and cube butternut squash
  2. Steam, bake or boil until fork tender *I boiled in water much like when you make mashed potatoes
  3. Drain and blend in blender or food processor with ghee until smooth * I used a Vitamix
  4. Add salt to taste

 

Ghee and Garlic Green Beans

Serves 4

 

Ingredients:

1 package frozen green beans

3 cloves of garlic

2 tbsp ghee

 

  1. heat green beans to thaw in water on stovetop
  2. Drain add green beans, ghee and minced garlic back to saucepan
  3. Cook on medium heat for 5 minutes or until garlic is fragrant

 

Alrighty folks there you have it. Three recipes that make for a healthy week night dinner. Easy to incorporate into your busy lives. Now my kids are pretty good eaters and with a little coaxing on the squash part they cleared their plates! Hope you enjoy this meal and can incorporate it into your recipe rotation! Whole 30 Check-In and Butternut Squash Lasagna Recipe

Happy Tuesday Everyone! Wow, things have been busy! And with picking up an extra day at work this weekend I feel like I haven’t posted in forever!! I just wanted to give a few updates on how my Whole 30 has been going and share what I have been eating especially super easy and delicious dinner recipe!

 

Last week I confessed that I was really struggling with finding the time to eat. But I have found that if I can entertain the kids for an hour I can get a ton of meal prep done. This allows me to have compliant options always available, making it so much easier to throw a meal together. In one hour I can make an egg bake that will take care of breakfast for a few days, boil eggs for a quick protein component to a meal, and prepare and roast a bunch of veggies to always have on hand. As busy mom’s planning ahead is essential. If not I ponder over what to eat until I give up and eat nothing because I can’t make a decision. The other things need to be taken care of and eaten gets pushed to the back burner.

 

So this past week I have done much better and I feel fantastic! It really makes me realize that this is how my body should feel all the time, and that the food I eat can have such a huge impact on my health…craziness! Hopefully I feel this good for the next 18 days!

 

Breakfasts have consisted of either an egg bake I throw together or eggs and veggies. Find me awesome Spicy Sausage and Veggie Egg Bake recipe here! We always tend to have a surplus of eggs from our backyard chickens this time of year, which is perfect for a Whole 30! Lunch has been leftovers or a big salad. And dinner is meat and lots of veggies. I look for recipes that are quick, easy, filling and nutritious!

Great Lunch… Huge salad with HB Egg, Avocado, Bacon and Grilled Chicken!

 

I work weekend nights as a nurse, usually just Fridays and Saturdays, but this weekend I also worked Sunday. So dinners on these nights need to be quick and easy, as well as filling and nutritious. I am going to share a family favorite of ours, we call it Butternut Squash Lasagna. Perfect warm, filling meal for this time of year!

Butternut Squash Lasagna

 

Serves 8

 

Ingredients:

1 large Butternut Squash

1 lb. Italian Sausage

2 26 oz. Jars Sugar Free Spaghetti Sauce

 

  1. Preheat oven to 350 degrees
  2. Brown sausage in skillet, once browned combine with sauce
  3. Peel and slice squash, remove and discard seeds
  4. Pour enough sauce/sausage mix to cover the bottom of a 9×13 baking dish
  5. Layer squash and sauce/sausage mix as you would a lasagna
  6. Cover with remaining sauce/sausage mix
  7. Bake uncovered for 1 hour or until squash is tender

 

So easy and so good! Hope you all can add this to your Whole 30 recipe rotation!
